Nothing screams “Spring!” like Beef Pie. \u00a0Right? \u00a0Doesn’t Beef Pie conjure up images of daffodils and tulips glistening with morning dew? \u00a0Baby lambs\u00a0trotting along gaily in a freshly carpeted grass field next to their fluffy\u00a0mothers? Sunshine slowly warming the cherry blossoms to pink perfection?<\/p>\n

Um, no?<\/p>\n

Admittedly, there is nothing about Beef Pie that infuses a Spring-like energy into the soul but I feel like comfort food is appropriate\u00a0for all seasons. \u00a0Besides, it has a homemade crust. \u00a0And that’s pretty much always okay in my book.<\/p>\n

And now for the recipe:<\/p>\n

Beef Pie with Scratch Crust<\/h2>\n

Ingredients<\/h3>\n\n\n\n

  • 1 lb ground beef<\/li>\n
  • 1 Tbs worcestershire sauce<\/li>\n
  • 1 small onion or 1\/2 large, diced<\/li>\n
  • 2 carrots, diced<\/li>\n
  • 2 small potatoes, diced<\/li>\n
  • 1 cup frozen peas<\/li>\n
  • 3 tbs butter<\/li>\n<\/ul>\n<\/td>\n

  • 1\/3 cup flour<\/li>\n
  • 1 1\/4 cups beef broth<\/li>\n
  • 1\/2 tsp garlic powder<\/li>\n
  • 1\/2 tsp smoked paprika<\/li>\n
  • 1\/2 tsp cajun seasoning*<\/li>\n
  • 1 recipe for 9-inch pie crust**<\/li>\n<\/ul>\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

    \u00a0Directions<\/h3>\n
      \n
    1. Preheat oven to 425 degrees.<\/li>\n
    2. Brown ground beef in large saute pan and set aside. While beef is browning, precook potatoes and carrots in microwave until just soft.<\/li>\n
    3. Melt butter in\u00a0pan\u00a0and add\u00a0onions; saute until translucent. \u00a0Sprinkle flour over cooked onions and whisk until blended.<\/li>\n
    4. Add broth and stir in garlic powder, paprika and cajun seasoning (*My family likes the smoky, slightly spicy flavor of cajun seasoning, you can substitute any favorite flavor of seasoning in this step).<\/li>\n
    5. Add browned beef and veggies to gravy. \u00a0Bring to a boil. \u00a0Gravy\u00a0will begin to thicken. \u00a0Once heated through, transfer to a deep dish pie plate or 2 quart round pyrex dish.<\/li>\n
    6. Cover with prepared pie crust and cut slits into top for venting.<\/li>\n
    7. Bake for 30 – 35 minutes until mixture is bubbling and crust is golden brown. \u00a0Let stand for 10 minutes to allow gravy to thicken.<\/li>\n
    8. Eat it. \u00a0And then eat another piece. \u00a0And then put it in a Tupperware for lunch leftovers. \u00a0And then eat it.<\/li>\n<\/ol>\n

      ** Recipe for Flaky Pie Crust<\/p>\n

      • 1 1\/4 cups all purpose flour<\/li>\n
      • 1\/4 tsp salt<\/li>\n
      • 1\/2 cup chilled butter, cubed<\/li>\n
      • 1\/4 cup ice water<\/li>\n<\/ul>\n

        1. In a food processor fitted with the dough\u00a0blade\u00a0add dry ingredients and quickly pulse to mix.<\/li>\n
        2. Add chilled cubed butter to processor and pulse until mixture resembles coarse crumbs.<\/li>\n
        3. Add water 1 Tbs at a time and pulse until mixture is just coming together. \u00a0Make sure dough does not get too wet.<\/li>\n
        4. Turn dough out onto floured surface and “smear” it across the work surface in one or two forward motions with the heel of your hand. \u00a0This will distribute the fat throughout the dough.<\/li>\n
        5. Pat the dough into a round disc and refrigerate for at least 30 minutes before use.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"
